My Mom’s Sweet Potato Pie

Description:
Mom’s sweet potato pies are a vital part of my family’s Thanksgiving. This is a recipe she inherited from her mother, a treasured tradition passed down through generations. The secret to its creamy perfection lies in the blender, effortlessly incorporating ingredients to create a pie that’s beyond belief. While Mom prefers her sweet potato pie without any spices, I like to add a pinch or two for that extra warmth and depth of flavor. Additionally, instead of the traditional glaze, we opt for a dollop of creamy refrigerated whipped topping, adding a delightful finishing touch. However, for those who prefer the classic glaze, I’ve included directions as an option.

Ingredients:

Quantity Ingredient
2 cups sugar
2 – 2 1/2 cups flour
1 egg
1 can evaporated milk
2 sticks margarine
1 teaspoon vanilla
1/4 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon clove
1/4 teaspoon lemon juice
1 cup powdered sugar

Cooking Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the pie shells by placing them in the preheated oven for about 5 minutes, or until just barely brown; then, set them aside.
  3. In a blender, combine the remaining pie ingredients – sugar, flour, egg, evaporated milk, margarine, vanilla, cinnamon, nutmeg, clove, and lemon juice. Blend until the mixture is smooth and well-combined.
  4. Pour the filling equally into the two prepared pie shells.
  5. Bake in the preheated oven at 350°F (175°C) for 30 to 40 minutes, or until the filling is set. Keep an eye on the crust; if it begins to brown too much during baking, you can cover the edges with strips of aluminum foil to prevent over-browning.
  6. Optional Glaze: While the pies are baking, you can prepare the glaze. In a mixing bowl, combine the powdered sugar with any remaining spices if desired. Use an electric mixer to blend until smooth.
  7. Drizzle the glaze over the warm pies once they are out of the oven.
  8. Serve warm or at room temperature, optionally topped with whipped cream or your favorite topping.

Enjoy the rich flavors and cherished memories with each heavenly bite of Mom’s sweet potato pie! 🥧✨
