  2. Cool and Peel:

    • Allow the beets to cool until you can handle them comfortably. Then, remove the skins (they should easily slip off).
  3. Slice or Quarter:

    • Depending on their size, either leave the beets whole if they are small, or quarter or halve them as desired.
  4. Pack in Jars:

    • Place the prepared beets into clean pint-sized jars.
  5. Prepare Brine:

    • In a saucepan, combine the sugar, water, and vinegar. Bring the mixture to a boil.
  6. Pour Brine Over Beets:

    • Carefully pour the hot brine over the beets in the jars, leaving about 1/2 inch of space from the rim.
  7. Seal Jars:

    • Wipe the jar rims clean to remove any spills. Then, place the lids and rings on the jars.
  8. Process in Water Bath:

    • Process the jars in a hot water canner for 10 minutes.
  9. Cool and Store:

    • After processing, allow the jars to cool completely. Check the seals after 24 hours. Any jars that haven’t sealed properly should be refrigerated and used promptly.
  10. Optional:
