- Allow the beets to cool until you can handle them comfortably. Then, remove the skins (they should easily slip off).

- Depending on their size, either leave the beets whole if they are small, or quarter or halve them as desired.

- Place the prepared beets into clean pint-sized jars.

- In a saucepan, combine the sugar, water, and vinegar. Bring the mixture to a boil.

- Carefully pour the hot brine over the beets in the jars, leaving about 1/2 inch of space from the rim.
