Instructions:

  1. CRUST:

    • Combine flour, sugar, and lemon rind.
    • Cut in butter or margarine until the mixture resembles coarse crumbs.
    • Add egg yolk and 1 tablespoon of milk; gently mix to form a dough.
    • Pat the dough into the bottom of a 10-inch Springform pan with greased sides.
    • Press the dough up the sides of the pan for 1 inch.
  2. FILLING:

    • Toss together bread crumbs and melted butter, spreading them evenly over the pastry crust.
    • Toss apple slices, lemon juice, and 1/4 cup of sugar.
    • Spread the apple mixture over the crumbs.
    • Drain raisins, reserving rum, and sprinkle raisins over the apples.
    • Bake in a preheated 350ยฐF (175ยฐC) oven for 15 minutes.
  3. CUSTARD:

    • Beat eggs and sugar until thick and lemon-colored.
    • Stir in milk and the reserved rum.
    • Pour the custard over the apples.
    • Bake for 45 to 60 minutes at 350ยฐF (175ยฐC) until the custard is set.
  4. COOLING:

    • Cool the Rahmapfelkuchen completely before serving.
