Description: This soup is always a big hit at family gatherings. It was my favorite at a local restaurant. I don’t have their recipe, but this is my own concoction that comes very close. Excellent with hot homemade rolls on a beautiful fall day.

Ingredients:

Instructions:

  1. Boil the Ham Bone: In a large pot, bring the ham bone and bay leaves to a boil in approximately 3 quarts of water for one hour. This will create a rich and flavorful broth base for the soup.

  2. Check the Broth: If your broth boils down too much during the hour, you may need to add extra water to maintain the desired volume and concentration of flavors.

  3. Prepare the Ham: After the hour is up, remove the ham bone from the broth and cut the meat into bite-sized chunks. Discard any excess fat or bone.

  4. Add Ingredients: Return the chopped ham to the pot with the broth. Then add in the diced onion, chopped celery, peeled and diced potatoes, sliced carrots, shredded cabbage, and chopped parsley.

  5. Season and Cook: Season the soup with salt and pepper to taste. Allow the soup to simmer gently over medium heat until the vegetables are tender and flavorful, typically for about 40-50 minutes.

  6. Serve: Once the vegetables are cooked to your liking, ladle the hot German potato soup into bowls and serve immediately. Enjoy it with some crusty bread or homemade rolls for a satisfying meal.
