Category: Desserts

Servings: 6

Ingredients

Ingredient Quantity
All-purpose flour 270g
Sugar 200g
Eggs 150g
Whole milk 160g
Vegetable oil 100g
Baking powder 1 tsp
Ground ginger 5g
Chopped hazelnuts (for batter) 50g
Whole hazelnuts (for decoration) 30g
Dark chocolate 100g

Instructions

  1. Prepare the batter:
Start by cracking the eggs into a large mixing bowl. Add the sugar and whisk until the mixture is smooth and creamy. Gradually incorporate a couple of tablespoons of the flour, followed by a splash of milk. Continue mixing until the batter is evenly combined.

  2. Add flavor and texture:
Sprinkle in the ground ginger for a fragrant, warm spice note. Then, fold in the chopped hazelnuts. These add a delightful crunch and nutty flavor to the cake.

  3. Assemble the batter:
Gradually sift in the remaining flour and add the baking powder. Stir until the dry ingredients are fully incorporated. Next, add the vegetable oil, which will keep the plumcake moist and tender.

  4. Prepare the pan:
Lightly grease a 30×12 cm loaf pan with butter or oil, ensuring that the edges are well coated for easy release later.

  5. Bake the plumcake:
Pour the prepared batter into the loaf pan and smooth out the surface. Place the pan in the lower part of the oven and bake at 180ยฐC (350ยฐF) for about 40 minutes. The cake is done when a toothpick inserted into the center comes out clean.

  6. Cool the cake:
Once the plumcake is baked, remove it from the oven and allow it to cool completely in the pan on a wire rack. This will prevent it from becoming soggy.

  7. Prepare the chocolate topping:
While the cake is cooling, break the dark chocolate into small pieces and melt it gently, either in a microwave in short intervals or over a double boiler. Stir until smooth and glossy.

  8. Decorate the cake:
When the plumcake has cooled, carefully remove it from the pan. Drizzle the melted chocolate over the top, spreading it evenly with a spatula.

  9. Garnish with whole hazelnuts:
To finish, halve the remaining whole hazelnuts and sprinkle them over the top of the cake, pressing them lightly into the chocolate so they adhere.

  10. Serve and enjoy:
Once decorated, slice the plumcake into generous portions. Serve with a cup of tea or coffee for the perfect sweet treat!
