Soft Coffee Molasses Crackle Cookies

Ingredients:
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/4 teaspoons ground ginger
- 1/2 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1 cup dark brown sugar, packed
- 1/2 cup shortening
- 1/2 cup molasses
- 1 tablespoon instant coffee granules
- 1 tablespoon water
- 1 egg
- 1 1/2 teaspoons vanilla extract
- Granulated sugar (for rolling)
Instructions:

Prepare the Dough:
- In a bowl, combine flour, baking soda, ginger, salt, and nutmeg. Set aside.
- Using medium speed on an electric mixer, beat together brown sugar and shortening until fluffy.
- Beat in molasses until just blended.
- Dissolve instant coffee in water and add to the brown sugar mixture.
- Add egg and vanilla extract; beat just until blended.
- Stir in the flour mixture just until combined.

Chill the Dough:
- Cover the dough and refrigerate until firm, about 4 hours or overnight.

Shape and Bake:
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or lightly grease them.
- Shape the chilled dough into 1-inch balls (about 1 tablespoon of dough each).
- Roll each ball in granulated sugar to coat evenly.
- Place the balls 2 inches apart on the prepared baking sheets.

- Bake in the preheated oven for 12-14 minutes, or until the cookies are crackled on top.
- The cookies will be soft to the touch; do not overbake.

- Let the cookies stand on the baking sheets for 1 minute, then transfer them to a wire rack to cool completely.
