Red Bell Pepper (Capsicum), cut into 3/4-inch pieces 1 (medium-sized)
Fresh Ginger, finely chopped 2 tablespoons

Instructions

  1. Prepare the Ingredients
    Start by cutting the chicken breasts into 1-inch cubes. Set them aside. Wash the heads of bok choy thoroughly, slice them in half, and cut the root ends into small squares. Slice the mushrooms and chop the red bell pepper into 3/4-inch pieces. Set these aside for the stir-frying process.

  2. Stir-Fry Vegetables
    In a heavy-bottomed pan, heat some vegetable oil. Add the bok choy and red bell pepper. Stir-fry until the vegetables are just tender but still crisp. Let it simmer for about 5 minutes, allowing the sauce to thicken and coat everything nicely.
