Begin by sanitizing your jars and lids according to the guidelines provided by the Ministry of Health (you can find the full details at the end of the recipe). Once the sterilization process is complete, set the jars aside to dry. -
Prepare the Plums:
Wash the plums thoroughly, and then cut them in half to remove the pits. Set aside. -
Prepare the Ginger:
Using a vegetable peeler or a small knife, peel the fresh ginger. Grate it finely for maximum flavor. -
Cooking the Jam:
In a large pot, add the prepared plums and sugar. Stir the mixture, then grate the ginger directly into the pot. Cook on medium heat, stirring occasionally, for about 30 minutes. The mixture should reach a temperature of 108°C (226°F), which is the ideal temperature for jam consistency. -
Puree the Mixture:
Once the mixture is cooked, pass it through a fine sieve or food mill (preferably with a tight mesh) to remove the skins and achieve a smooth consistency. -
Fill the Jars:
Carefully pour the hot jam into the sterilized jars, making sure to leave about 1 cm of space from the top of the jar. Gently tap the jars on the counter to settle the jam. -
Seal the Jars:
If using jars with rubber-seal closures, you can check the vacuum seal by pulling the tab: if you hear a dry “pop,” it means the vacuum seal is intact. If the tab feels soft, the seal has not formed properly, and it’s better not to consume the jam.For jars with screw-on lids, tighten the lids without over-tightening and allow the jars to cool down to room temperature. During this cooling process, the heat will create a vacuum seal, ensuring long-term preservation.

Check for the Seal:
After the jars have cooled, check if the vacuum seal is effective. Press the center of the lid—if you don’t hear the usual “click-clack” sound, then the seal has been properly formed. -
