Description:

Ingredients:

  • 360g cake flour
  • 275g caster sugar
  • 10g baking powder
  • 10g ground ginger
  • 3g salt
  • Zest of 2 lemons
  • 75g butter
  • 200ml skim milk
  • 1 egg
  • 10ml vanilla essence
  • 175g applesauce
  • Juice of 1 lemon
  • Lemon slices (for topping)

Instructions:

  1. Preheat the oven to 180ºC (350ºF) and spray a medium-sized loaf pan with non-stick spray.

  2. Sift the cake flour, caster sugar, baking powder, ground ginger, and salt together in a large bowl.

  3. Stir in the lemon zest.

  4. Dice the butter and rub it into the flour mixture until it resembles fine breadcrumbs.

  5. In a separate bowl, beat together the skim milk, egg, vanilla essence, lemon juice, and applesauce until well combined.

  6. Add the wet ingredients to the flour mixture and mix until smooth.

  7. Pour the batter into the prepared loaf pan.

  8. Arrange lemon slices on top of the batter.

  9. Bake for about 1 hour and 15 minutes, or until a skewer inserted into the center comes out clean. If the top starts to brown too quickly, cover the loaf with aluminum foil after about an hour to prevent burning.

  10. Allow the loaf to cool in the pan for about 10 minutes before turning it out onto a wire rack to cool completely.
