Ingredients

For the Glaze:

  • 1 1/2 cups pineapple juice
  • 1/4 cup white wine vinegar
  • 1/2 teaspoon grated fresh ginger
  • 1 1/2 tablespoons soy sauce
  • 1/8 cup light brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lime juice
  • 1/2 teaspoon white pepper

For the Salmon Patties:

  • 1 teaspoon chipotle pepper puree
  • 1 pound salmon steaks, skinless
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1/2 tablespoon canola oil
  • 1/4 cup finely chopped green onion
  • Salt and pepper to taste

Instructions

  1. Prepare the Glaze:

    • In a small saucepan, combine 1 1/2 cups pineapple juice, 1/4 cup white wine vinegar, 1/2 teaspoon grated fresh ginger, 1 1/2 tablespoons soy sauce, and 1/8 cup light brown sugar.
    • Bring the mixture to a boil over medium-high heat, stirring occasionally to dissolve the sugar.
    • Once boiling, reduce the heat to low and let the mixture simmer for about 30 minutes, or until the volume is reduced by half and the glaze has thickened slightly.
    • Remove the saucepan from heat and whisk in 1 tablespoon Dijon mustard. Stir in 1 tablespoon lime juice and 1/2 teaspoon white pepper.
    • Allow the glaze to cool while you prepare the salmon patties.
  2. Prepare the Salmon Patties:

    • In a blender or food processor, puree 1 teaspoon chipotle pepper until smooth. Set aside.
    • Cut 1 pound of salmon steaks into smaller pieces and place them in the food processor. Pulse until the salmon is finely ground and has a texture similar to ground beef.
    • In a large mixing bowl, combine the ground salmon, 1 teaspoon chipotle puree, 1 tablespoon Dijon mustard, 1 tablespoon honey, 1/2 tablespoon canola oil, and 1/4 cup finely chopped green onion. Season with salt and pepper to taste. Mix everything together until well combined.
    • Cover the bowl with plastic wrap and refrigerate for about 30 minutes to let the mixture firm up. This will make it easier to shape the patties.
  3. Shape and Cook the Patties:

    • Once the salmon mixture has chilled, shape it into 4 patties. The cold mixture will help the patties hold their shape during cooking.
    • Preheat your barbecue grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
    • Place the salmon patties on the grill and cook for about 3 minutes on each side, or until the internal temperature reaches 145°F (63°C) and the patties are cooked through. Brush the patties frequently with the prepared glaze while grilling to enhance the flavor and create a beautiful caramelized finish.
  4. Serve:

    • Serve the salmon burgers on your favorite buns with your choice of toppings. Add a side of crispy fries or a fresh salad to complete your meal.
