Gluten-Free Apple and Blackberry Cake

Golden apples 260g
Blackberries 100g

Instructions

  1. Prepare the Apples
    Begin by cleaning and prepping the apples. Cut them into quarters and remove the cores. Then slice them thinly, about 2-3mm thick. You should get approximately 200g of sliced apples.
    Sprinkle the apple slices with brown sugar, mix gently, and set them aside to infuse with the sweetness.

  2. Prepare the Batter
    In a mixing bowl, combine the eggs and honey. Use a hand mixer or whisk to lightly beat the eggs until they are slightly frothy.
    Gradually add the almond flour, followed by the milk, adding it in a steady stream.
    Once the mixture is smooth, add the baking powder and mix until fully incorporated. Turn off the mixer once the batter is well combined.

  3. Assemble the Cake
    Gently fold the apple slices into the batter, ensuring they are evenly distributed throughout the mixture.
    Pour the batter into a buttered 22cm round cake pan, leveling the top with a spatula to ensure even baking.
    Arrange the blackberries on top, filling in any gaps between the apple slices.

  4. Bake the Cake
    Preheat the oven to 180°C (350°F) with static heat. Place the cake in the center of the oven and bake for about 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
    Once baked, remove from the oven and allow the cake to cool completely in the pan before transferring it to a serving plate.

  5. Finishing Touches
    If desired, dust the top of the cooled cake with powdered sugar for a finishing touch.
