Instructions:

  1. Begin by preparing the monkfish fillets. Cut the fish into bite-sized pieces, about 3-4 cm each, for easy cooking and serving. If you’re using pre-cleaned monkfish fillets, this step will be quicker.

  2. Wash the cherry tomatoes thoroughly, then slice them in half to release their juicy sweetness. Set them aside to incorporate into the dish later.

  3. In a large pan, heat the extra virgin olive oil over medium heat. Add the whole garlic clove, ensuring that it releases its aroma into the oil. Allow the garlic to infuse the oil for a couple of minutes.
