Gnocchetti with Gorgonzola and Walnuts

Ingredients

All-Purpose Flour 300g

Semolina Flour To taste
Gorgonzola Cheese 200g
Whole Milk 100ml
Walnuts (Shelled) 60g

Instructions

Start by preparing the gnocchi dough. Place the potatoes in a pot of cold water and bring to a boil. Cook them until soft and tender. Once cooked, peel and mash the potatoes until smooth. Allow them to cool slightly.

Next, pour the all-purpose flour onto a clean work surface, creating a well in the center. Add the egg and a pinch of salt into the well, then begin mixing the ingredients together. Knead the dough until it becomes smooth and elastic. Divide the dough into smaller portions and roll them out into long ropes, dusting lightly with semolina flour. Cut the ropes into small pieces, approximately 1 cm in length, to form the gnocchi.

Bring a pot of salted water to a boil. While the water heats up, cut the gorgonzola into small pieces and chop the walnuts finely.

In a separate pan, heat the whole milk gently over low heat. Add the gorgonzola pieces to the milk and stir continuously until the cheese melts and the mixture becomes smooth.

Once the water is boiling, drop the gnocchi into the pot in small batches. When they rise to the surface, let them cook for another 2-3 minutes. Use a slotted spoon to remove the gnocchi from the water.

Transfer the cooked gnocchi directly into the pan with the melted gorgonzola sauce. Toss gently to coat the gnocchi with the creamy cheese sauce. Add the chopped walnuts and stir well to combine all the flavors.

Serve the gnocchetti immediately, garnished with a few extra walnut pieces if desired. Enjoy this rich and indulgent dish of gnocchi, gorgonzola, and walnuts as the perfect comfort food for a special occasion or a cozy dinner.
