Instructions:
Step 1: Prepare the Recheado Masala
- To begin making Batata Recheado with Carrots & Beans, start by preparing the Recheado masala.
- Soak the dry red chilies, cloves, cinnamon stick, cumin seeds, black peppercorns, cardamom pods, ginger, and garlic in vinegar for about 4 to 5 hours. This will allow the spices to release their flavors and soften for grinding.

- Heat oil in a large wok or skillet over medium heat. Once the oil is hot, add the chopped onion and sauté it until it becomes soft and translucent.

- Now, add the prepared Recheado masala to the potatoes and sauté for about 5 minutes, ensuring the raw smell of the spices cooks off. Stir occasionally, keeping the heat at medium to avoid burning the masala.
- Add the cooked carrots and beans to the wok, stirring well to coat the vegetables with the Recheado masala. Check the seasoning and adjust the salt if needed.

- Cover the pan and cook for another 4 minutes on low heat, allowing the flavors to meld together and the vegetables to be well-coated in the masala.
