Ingredients

  • 3 Whole Eggs
  • 1 Onion, finely chopped
  • 5 Garlic cloves, grated
  • 4 tablespoons Fresh coconut, grated
  • 1/2 Onion, finely chopped (for the gravy)
  • 1 tablespoon Coriander (Dhania) Seeds
  • 1 Tamarind, marble-sized ball
  • 3 Dry Red Chilies
  • 1/2 teaspoon Turmeric powder (Haldi)
  • Water (as needed)
  • Salt, to taste
  • 2 tablespoons Oil

Cook Time: 30 minutes

Instructions

  1. To begin, grind the ingredients for the gravy (except salt and oil) into a fine paste, adding 1/2 cup of warm water. Add more water if needed to achieve a smooth consistency.
  2. Heat oil in a kadai or wok. Once hot, add the finely chopped onion and sauté until it becomes soft and translucent.
  3. Add the grated garlic to the onions and sauté for a few seconds, letting the raw smell of garlic dissipate.
  4. Pour the prepared coconut gravy into the onion-garlic mixture and stir well to combine. Adjust the consistency of the curry by adding some water, and bring it to a brisk boil.
  5. Stir in salt and adjust the seasoning to your taste.
  6. Once the curry starts boiling, crack one egg at a time and carefully drop it into the gravy. Discard the shells.
  7. Let the eggs cook in the gravy, ensuring that some of the hot gravy is spooned over the eggs to help cook them through.
  8. When the eggs are fully cooked, turn off the heat.
  9. Serve the Goan Egg Drop Curry with warm steamed rice, pickled onions, and papad for a complete meal.
