Ingredients
- 3 Whole Eggs
- 1 Onion, finely chopped
- 5 Garlic cloves, grated
- 4 tablespoons Fresh coconut, grated
- 1/2 Onion, finely chopped (for the gravy)
- 1 tablespoon Coriander (Dhania) Seeds
- 1 Tamarind, marble-sized ball
- 3 Dry Red Chilies
- 1/2 teaspoon Turmeric powder (Haldi)
- Water (as needed)
- Salt, to taste

Instructions
- To begin, grind the ingredients for the gravy (except salt and oil) into a fine paste, adding 1/2 cup of warm water. Add more water if needed to achieve a smooth consistency.
- Heat oil in a kadai or wok. Once hot, add the finely chopped onion and sauté until it becomes soft and translucent.
- Add the grated garlic to the onions and sauté for a few seconds, letting the raw smell of garlic dissipate.
- Pour the prepared coconut gravy into the onion-garlic mixture and stir well to combine. Adjust the consistency of the curry by adding some water, and bring it to a brisk boil.
- Stir in salt and adjust the seasoning to your taste.
- Once the curry starts boiling, crack one egg at a time and carefully drop it into the gravy. Discard the shells.
- Let the eggs cook in the gravy, ensuring that some of the hot gravy is spooned over the eggs to help cook them through.
- When the eggs are fully cooked, turn off the heat.
- Serve the Goan Egg Drop Curry with warm steamed rice, pickled onions, and papad for a complete meal.
