Description:

An inexpensive but savoury dish with roots possibly tracing back to French origins, known as “lapin gallois”. This childhood favorite was a regular bedtime snack in my family, never failing to delight. Cheesy Welsh Rarebit is a comforting dish perfect for breakfast or any time of day.

Ingredients:

  • 4 slices extra-sharp cheddar cheese 🧀
  • 1 cup dark ale 🍺
  • 5 tablespoons unsalted butter 🧈
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon cayenne pepper
  • 2 slices bread 🍞

Instructions:

Step Description
1 Preheat your broiler. 🌡️
2 Place the bread slices on a baking sheet and toast them under the broiler, turning once, until golden brown on both sides, approximately 30-40 seconds per side.
3 Remove the toasted bread from the broiler and set aside.
4 In a small saucepan over medium heat, combine the extra-sharp cheddar cheese and dark ale. Stir continuously until the cheese is melted and the mixture is smooth.
5 Add the unsalted butter, Dijon mustard, salt, pepper, and cayenne pepper to the cheese mixture. Whisk together until everything is smoothly melted and combined, which should take about 1-2 minutes.
6 Cut each piece of toast in half diagonally, forming triangles, and arrange them around the edges on a flameproof platter.
7 Pour the cheese mixture evenly over the toast slices, ensuring they are fully covered.
8 Place the platter under the broiler and broil until the cheese bubbles and starts to scorch in places, approximately 2 minutes. Keep an eye on it to prevent burning.
9 Once the cheese is bubbly and lightly browned, remove the platter from the broiler. Be cautious as it will be hot!
10 Serve the Cheesy Welsh Rarebit piping hot and enjoy the gooey, flavorful goodness. 🤤
