Danish “Mandel Kager” Almond Cookies

Ingredients:

1/2 cup Shortening
1/2 cup Butter
1 Egg
1/2 cup Sugar
1 2/3 cups Flour
1/2 tsp Baking powder
1 tsp Cinnamon
1 1/2 tsp Cardamom
1/2 cup Water
1 cup Almonds (chopped)

Instructions:

  1. Cream the shortening, butter, sugar & egg. In a mixing bowl, combine the shortening, butter, sugar, and egg. Beat until the mixture is light and creamy.

  2. Mix flour, baking powder, cinnamon & cardamom. In a separate bowl, sift together the flour, baking powder, cinnamon, and cardamom until well combined.

  3. Add nuts. Gradually add the chopped almonds to the flour mixture, stirring until evenly distributed.

  4. Chill. Cover the dough and chill it in the refrigerator for about 30 minutes to firm up.

  5. Roll into 1″ balls and place on ungreased cookie sheet. Preheat your oven to 375°F (190°C). Roll the chilled dough into 1-inch balls and place them onto an ungreased cookie sheet, spacing them about 2 inches apart.

  6. Flatten slightly and decorate with an almond. Gently flatten each ball with the palm of your hand and press a whole almond onto the center of each cookie.

  7. Brush with egg glaze. In a small bowl, prepare the egg glaze by mixing together the egg yolk and water. Brush each cookie lightly with the egg glaze for a glossy finish.

  8. Bake at 375°F for 10-12 minutes. Place the cookie sheet in the preheated oven and bake for 10 to 12 minutes or until the edges are golden brown.
