Instructions:

  1. Prepare the Butter: Start by melting the butter either using a double boiler or in the microwave. Allow it to cool slightly once melted.

  2. Prepare the Apples: Peel the apples using a knife or a vegetable peeler for convenience. Cut each apple into quarters and then slice each quarter into half-centimeter thick wedges. Place the apple slices into a large bowl and sprinkle them with 50g of granulated sugar to help release their juices.

  3. Chop the Chocolate: Using a sharp knife, finely chop the dark chocolate into small pieces. This will help it melt evenly throughout the cake and provide pockets of chocolate goodness.

  4. Mix the Wet Ingredients: In a separate large mixing bowl, combine the eggs and the remaining granulated sugar. Using an electric mixer, whisk the mixture for 5-6 minutes until it becomes light and fluffy.

  5. Combine Dry Ingredients: Sift together the all-purpose flour, baking powder, and a pinch of salt. Gradually add the sifted dry ingredients into the egg mixture, one tablespoon at a time. Continue mixing with the electric mixer until all the dry ingredients are incorporated and the mixture has a smooth consistency.

  6. Add Apple Juice and Butter: Pour in the apple juice and the melted butter into the batter, mixing until the batter is well combined and smooth. The mixture should be thick but not dry.

  7. Prepare the Baking Pan: Grease and flour a 24cm (9.5-inch) round springform pan. This will help the cake come out easily once baked.

  8. Layer the Cake: Pour half of the batter into the prepared pan and spread it evenly with a spatula. Next, arrange the apple slices on top of the batter in a spiral pattern starting from the edge of the pan, creating a circular shape. Once the outer ring is complete, fill the center with more apple slices.

  9. Add the Chocolate: Sprinkle the chopped dark chocolate evenly over the apple slices. This layer of chocolate will melt beautifully into the cake, adding richness to each bite.

  10. Add the Remaining Batter: Carefully pour the remaining batter over the apple and chocolate layer, spreading it evenly with a spatula. Be gentle to keep the apples in place.

  11. Top with Apple Slices: Finish by arranging the remaining apple slices on top of the cake, again following the spiral pattern. Place the slices so that the edges are facing upwards for a beautiful finish.

  12. Bake the Cake: Place the cake into a preheated oven at 180°C (350°F) and bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean. The top of the cake should be golden brown, and the apples should be tender.

  13. Cool and Serve: Once the cake is baked, allow it to cool for 10-15 minutes in the pan before transferring it to a wire rack. Let it cool completely. Before serving, dust the top of the cake with powdered sugar for a beautiful finishing touch.

Tips:

  • For a more intense chocolate flavor, you can use a darker variety of chocolate (70% cocoa or higher).
  • You can substitute the golden apples with other varieties such as Granny Smith for a slightly tart flavor or Fuji apples for a sweeter taste.
  • This cake pairs wonderfully with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.

Enjoy your Golden Apple and Dark Chocolate Cake as a delicious end to any meal, or as a comforting treat with a cup of tea or coffee.
