Ingredients:
- 3/4 cup apple cider
- 1/2 cup pitted dates
- 1 cup raisins
- 1/2 tablespoon cornstarch
- 1/2 teaspoon ground ginger
- 2 teaspoons fresh lemon rind
- 1/2 cup sugar
- 1 cup all-purpose flour
- 5 tart cooking apples
Instructions:
-
Preheat Oven:
- Preheat your oven to 375 degrees Fahrenheit.
-
Prepare Filling:
- In a small saucepan, combine the apple cider, pitted dates, cornstarch, ground ginger, and fresh lemon rind. Stir well.
- Bring the mixture to a gentle boil over moderate heat, stirring constantly.
- Allow it to cook for about 2 minutes or until the mixture thickens, continuing to stir constantly.
- Once thickened, remove the mixture from the heat and set it aside.
-
Prepare Crust:
- Take one of the pie crusts and line a 9-inch pie plate with it. Trim any excess crust hanging over the edges.
-
Prepare Apple Mixture:
- In a large bowl, combine the sugar and flour.
- Add the tart cooking apples to the bowl and toss them until they are evenly coated with the sugar-flour mixture.
-
Assemble the Pie:
- Spoon the apple mixture into the prepared pie crust, spreading it out evenly.
- Pour the previously prepared cider mixture over the apple mixture, ensuring it covers the apples evenly.
- Take the remaining pie crust and cut slits in it. Carefully place it over the cider mixture.
- Trim the excess crust, leaving about 1/2 inch beyond the edge of the pie plate. Crimp the edges to seal the pie.
-
Bake:
- Sprinkle a little additional sugar over the top crust for extra sweetness.
- Place the pie in the preheated oven and bake for 40 to 45 minutes, or until the apples are tender, and the crust is golden brown.
- If you notice the edges of the crust browning too quickly, cover them with foil to prevent burning.
-
Cool and Serve:
- Once baked, remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours before serving.
- Serve slices of this delectable Apple Cider Pie on dessert plates and enjoy the warm, comforting flavors with your loved ones!
Notes:
- This pie is best enjoyed fresh but can be stored in the refrigerator for up to three days.
- Serve it warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat!
