Turkey Patties with Curry Sauce

There never seems to be enough recipes for ground turkey. So here’s one and a good one at that! Originally printed in a local newspaper.


Ingredients:

1 Butter
1/2 Onion
1 1/2 Chicken broth
1/2 Canned chicken broth
1/8 Nutmeg
2 Parsley
1 Egg
Ground turkey
1 Canola oil
2 Golden delicious apple
1/2 Butter
1 Shallots
1 Curry powder
2 Canned chicken broth
2 Tomato puree
1/2 Heavy cream
1/4 Almonds

Instructions:

  1. Prepare the Turkey Patties:

    • Heat butter in a saucepan over medium heat; add chopped onion and cook, stirring occasionally, until soft.
  2. Prepare the Pattie Mixture:

    • In a mixing bowl, combine 1 cup of bread crumbs with the chicken broth.
    • Add the cooked onion, nutmeg, parsley, egg, salt, and pepper to the breadcrumb mixture.
    • Incorporate the ground turkey into the mixture until well blended.
  3. Shape the Patties:

    • Divide the turkey mixture into 8 equal portions.
    • Sprinkle the remaining 1/2 cup of bread crumbs onto a flat surface.
    • Roll each portion of the turkey mixture in the bread crumbs and flatten them to about 3/4″ thickness.
  4. Cook the Patties:

    • Heat 2 tablespoons of canola oil in a large skillet over medium-high heat.
    • Cook each turkey pattie for about 4 minutes on each side or until nicely browned.
    • Once cooked, remove the patties from the heat and let them cool slightly.
  5. Prepare the Curry Sauce:

    • Peel and dice the golden delicious apple.
    • In a separate saucepan, melt butter over medium heat and add chopped shallots and curry powder. Cook, stirring, for about 1 minute.
    • Add the diced apple to the saucepan and continue stirring.
    • Pour in the canned chicken broth and tomato puree, and cook over moderately high heat for about 3 minutes or until the mixture is reduced to 1 cup.
    • Finally, add the heavy cream and cook for an additional 2 minutes until heated through.
  6. Serve:

    • Spoon the prepared curry sauce over the turkey patties and sprinkle with sliced almonds.
  7. Storage:

    • Both the turkey patties and the curry sauce can be prepared in advance and stored. Patties can be frozen, and the sauce can be reheated when ready to serve.
