Recipe: Apricot Squares

Description: During a visit to my future in-laws’ house many years ago, a friend of theirs made these delicious apricot bars. Before I flew home, I had the recipe in my hand to take back with me.

Ingredients:

Quantity Ingredient
2/3 cup Boiling water
Butter
1/2 cup Granulated sugar
1/4 cup Flour
1 Egg
2 Brown sugar
1 Flour
1/3 cup Baking powder
1/2 tsp Salt
1/4 tsp Vanilla extract
1/2 cup Dried apricots
1/2 cup Chopped nuts

Instructions:

  1. Prepare Apricots:

    • Place the dried apricots into boiling water for 10 minutes; then drain.
    • Chop cooled apricots and set aside.
  2. Preheat Oven:

    • Preheat oven to 350ยฐF (175ยฐC).
  3. Prepare Baking Pan:

    • Grease an 8-inch square baking pan.
  4. Prepare Bottom Layer:

    • In a small bowl, mix together butter, granulated sugar, and 1 cup of flour.
    • Press this mixture into the prepared pan.
  5. Bake Bottom Layer:

    • Bake for 25 minutes, then set aside to cool.
  6. Prepare Top Layer:

    • In another small bowl, beat together eggs and brown sugar.
    • Fold in 1/3 cup of flour, baking powder, and salt until well combined.
    • Stir in vanilla extract, chopped apricots, and nuts.
  7. Assemble and Bake:

    • Spread the top layer mixture evenly over the baked bottom layer.
    • Bake for an additional 30 to 40 minutes, until the top is golden brown.
  8. Cool and Serve:

    • Remove from the oven and cool on a wire rack.
    • Once cooled, sprinkle with confectioner’s sugar.
    • Cut into squares and serve.
