Instructions:

  1. Prepare Pastry: Roll out the puff pastry to a thickness of 3mm and cut out 4 rounds with a diameter of 10cm, and 4 rounds with a diameter of 15cm.

  2. Chill Pastry: Place the larger pastry rounds on a lightly greased baking tray, and place the remaining rounds on a tray lined with food plastic wrap. Cover and refrigerate the pastry for 15 minutes, or until ready to assemble the pies.

  3. Make Filling: In a mixing bowl, combine the trimmed asparagus spears (cut into bite-sized pieces), chopped sun-dried tomatoes, crumbled feta cheese, chopped fresh basil, freshly grated lemon rind, and freshly ground black pepper to taste. Mix well to ensure all ingredients are evenly distributed.

  4. Assemble Pies: Divide the prepared filling evenly among the larger pastry rounds, leaving a 1cm border around the edge. Brush the edges with beaten egg, then cover each pie with the smaller pastry rounds. Press the edges together firmly to seal the pies.

  5. Egg Wash: Brush the tops of the pies with the remaining beaten egg. This will give the pies a beautiful golden color as they bake.

  6. Bake: Using a sharp knife, make a few small slits in the tops of the pies to allow steam to escape during baking. Place the assembled pies in a preheated oven at 190°C (375°F) and bake for 25 minutes, or until the pastry is golden brown and crisp.

  7. Serve: Once baked to perfection, remove the pies from the oven and allow them to cool slightly before serving. These Asparagus and Feta Pies are best enjoyed warm, either as a delightful brunch option or as a tasty snack any time of the day.

With their irresistible combination of flavors and textures, these Asparagus and Feta Pies are sure to become a favorite in your recipe collection. So gather your ingredients and get ready to indulge in a culinary delight that’s as easy to make as it is delicious to eat!
