Title: Ayam Woku to Warm the Heart
Ingredients:
- 8 pieces of chicken
- 1 bunch of basil leaves, destemmed
- 2 stalks of green onions, sliced according to preference
Spices:
- 3 cm turmeric
- 1/2 candlenut
- 1/2 tsp ground pepper
- 2 stalks lemongrass, finely sliced
- 3 bay leaves
- 3 kaffir lime leaves
- 2 cm galangal
- 2 cm ginger
- 1/4 tsp sugar
- 1/2 tsp salt
- 1/2 tsp chicken broth powder (Royco Ayam)
- 8 shallots (half sliced)
- 4 cloves garlic (half sliced)
- Red and green chili peppers, to taste (half sliced)
Steps:

Rinse the chicken and marinate with lime juice and salt for about 10 minutes. Fry the chicken until golden brown. Drain and set aside.

Blend the spices (except lemongrass, kaffir lime leaves, and bay leaves) until smooth. Sauté the blended spices in hot oil, add lemongrass, kaffir lime leaves, and bay leaves. Stir until fragrant and cooked through.

Add the fried chicken to the sautéed spices, mix well. Pour in a little water (just enough to make the chicken moist and juicy). Add salt, sugar, and chicken broth powder. Include the basil leaves and sliced green onions. Stir, taste, and adjust seasoning. Simmer until the liquid reduces (ensure there is some gravy left as it complements well with rice).
