Ingredients:

  • 1 lb ground beef
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups salsa
  • 16 refrigerated biscuit dough rounds
  • 2 cups shredded colby-monterey jack cheese
  • 2 cups shredded lettuce

Instructions:

Step Description
1 In a large skillet, cook and crumble the ground beef over medium heat until it is browned and no longer pink; then, drain off any excess fat.
2 Season the beef with salt and pepper, then add 1 1/2 cups of salsa to the skillet. Stir well to combine, and continue cooking until the mixture is heated through.
3 Preheat your oven to 350°F (175°C).
4 Take each refrigerated biscuit dough round and split it in half, creating 32 halves in total.
5 On an ungreased baking sheet, gently flatten each biscuit half into 4-inch rounds, spacing them out evenly.
6 Bake the flattened biscuit rounds in the preheated oven for 10-12 minutes, or until they are golden brown and cooked through.
7 Once the biscuit rounds are baked, remove them from the oven and allow them to cool slightly.
8 To assemble the tostadas, evenly distribute the cooked meat mixture over the top of each biscuit round.
9 Sprinkle a generous amount of shredded colby-monterey jack cheese over the meat layer on each tostada.
10 Next, top each tostada with a handful of shredded lettuce, spreading it out evenly.
11 Spoon a dollop of the remaining salsa over the lettuce layer on each tostada.
12 Season the assembled tostadas with salt and pepper to taste.
