Instructions:

  1. Prepare the Ingredients:

    • Start by chopping the onions and mincing the garlic cloves.
    • Rinse the dill, parsley, and coriander leaves under cold water and pat them dry.
  2. Cook the Beans:

    • In a large pot, combine the crushed beans, chopped onions, minced garlic, dill, parsley, and coriander leaves.
    • Add plenty of water to cover the ingredients.
    • Place the pot over medium heat and bring the mixture to a boil.
    • Reduce the heat to low and simmer for 60-90 minutes, or until the beans are tender and well-cooked.
  3. Blend the Mixture:

    • Once the beans are cooked, either press them in a juice extractor or blend them in a blender until smooth.
    • Pass the blended mixture through a fine wire sieve to remove any remaining solids.
  4. Season and Simmer:

    • Return the blended mixture to the pot.
    • Add the cumin powder, mint powder, and salt (if desired) to the mixture.
    • Stir well to combine.
    • Continue to cook over low heat for an additional 7-10 minutes, allowing the flavors to meld together.
  5. Fry the Onions:

    • While the bissara is simmering, thinly slice the remaining onions.
    • In a separate pan, heat oil over medium heat.
    • Add the sliced onions to the hot oil and fry until they turn a golden brown color.
    • Once fried, remove the onions from the oil and set them aside.
  6. Serve:

    • Transfer the bissara to a shallow serving dish.
    • Drizzle the strained oil from the fried onions over the top of the bissara.
    • Decorate the dish with the fried onions for added flavor and texture.

Enjoy!
