Recipe: Onion & Beer Soup ๐Ÿฒ

Description: Lighter than the traditional version & quick to make! If, like me, you’re not a beer drinker – I suggest using a light beer – like Molson’s Canadian!!!!!!!

Instructions:

  1. Prepare Onions: Heat olive oil in a large pot over medium heat. Add sliced onions and sugar. Cover and cook, stirring occasionally, for 20-25 minutes or until the onions are slightly colored.

  2. Add Flour: Sprinkle flour over the onions and stir until well combined.

  3. Incorporate Beer: Slowly pour in the dark beer, followed by the chicken stock. Season to taste with salt and pepper.

  4. Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes to allow the flavors to meld.

  5. Prepare Soup Bowls: While the soup is simmering, preheat your broiler. Place toast slices in ovenproof soup bowls.

  6. Assemble: Ladle the hot soup into each bowl over the toast slices. Sprinkle with freshly chopped parsley and top with grated Gruyere cheese.

  7. Broil: Place the filled soup bowls under the broiler for a couple of minutes, until the cheese is melted and bubbly.

  8. Serve: Carefully remove the bowls from the oven and serve immediately, garnished with additional parsley if desired.
