Flavoured Onion Rice with Broccoli Recipe

Description: Another one of my bizarre originals, that actually turned out wonderfully! This makes a light main dish along with a salad/raita, or a side dish with anything else! Steam the broccoli beforehand if you like it more cooked. I like it crunchy! Oh, and I didn’t make a spelling error; “FlavoUr” is right 🙂

Instructions:

  1. Wash the Rice: Begin by thoroughly washing the long-grain and basmati rice in cold water. This step removes excess starch and ensures fluffy grains when cooked.

  2. Cook the Rice: In a saucepan, combine the washed rice with 1/2 cup of water and a pinch of salt. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan with a lid, leaving a small gap for steam to escape, and simmer for about 15 minutes or until the rice is cooked through and fluffy.

  3. Saute Onions: While the rice is cooking, melt butter in a skillet over medium-high heat. Add finely sliced onions and sauté until they are golden brown and caramelized. This process typically takes about 5-7 minutes. Once done, remove the onions from the skillet and set them aside.

  4. Cook Broccoli: In the same skillet used for the onions, reduce the heat to low and add 1/3 cup of water along with the margarine. Season with salt to taste. Add the broccoli florets to the skillet and cook for approximately 5 minutes, or until the broccoli is tender yet still crisp.

  5. Add Tomato Paste: Once the broccoli is cooked, add the tomato paste to the skillet. Stir well to combine all the ingredients and cook for an additional minute, allowing the flavors to meld together.

  6. Combine Ingredients: When all the water in the skillet has evaporated and the tomato paste is well incorporated, add the cooked rice and sautéed onions back into the skillet. Gently mix everything together until the rice and vegetables are evenly distributed.

  7. Final Touches: Heat the mixture through for about a minute, ensuring all components are warm. Taste and adjust the seasoning, adding salt and pepper to taste. Once seasoned to your liking, turn off the burner.
