I recently discovered the unique and flavorful taste of this “less popular” winter squash. I feel that this vegetable is overlooked by most of society. Do yourself a favor and a try butternut squash, if not this recipe, another. However, I feel that you might enjoy this version.

Ingredients:

2/3 Parsley
1 Lemon, rind of
3 Garlic cloves
1 Salt
1/2 Pepper
1/4 Reduced-sodium chicken broth
1/2 Parmesan cheese
3/4 Olive oil
2 Butternut squash

Instructions:

  1. Preparation:

    • Heat the oven to 400 degrees Fahrenheit.
    • Spray a 12*8-inch glass baking dish or gratin dish with nonstick cooking spray.
  2. Prepare Herb Mixture:

    • In a small bowl, mix together parsley, lemon peel, and minced garlic.
  3. Layer Squash:

    • Spread half of the butternut squash slices in the prepared baking dish.
    • Sprinkle with 1/4 teaspoon of salt, 1/8 teaspoon of pepper, and half of the parsley mixture.
    • Top with the remaining squash slices and parsley mixture.
  4. Add Broth:

    • Gently pour the reduced-sodium chicken broth over the squash layers.
    • Season with the remaining salt and pepper.
    • Cover the dish with foil.
  5. Bake:

    • Bake in the preheated oven for 40 to 45 minutes or until the squash is almost tender.

    • Meanwhile, in a small bowl, mix together grated Parmesan cheese, breadcrumbs, and olive oil.
