- 2 cups butternut squash flesh, scooped out and mashed
- 2 tablespoons reduced-sugar orange marmalade
- 2 cups skim milk
- 2 egg whites
- 2 tablespoons wheat germ
- Salt and pepper to taste
Instructions:

Prepare the Squash: - Preheat your oven to 375°F (190°C).
- Place the butternut squash halves, cut side down, in a baking dish.
- Pour 1/2 inch of water into the dish and bake for 30 minutes.
- Turn the squash over and continue baking for an additional 15 minutes, or until tender. Set aside to cool.

Prepare the Souffle Mixture: - Once the squash is cool enough to handle, carefully scoop out the flesh, leaving a 1/4-inch skin. You can do this step the day before and refrigerate the scooped flesh.
