Ingredients:

Quantity Ingredient
1 3/4 lbs Carrots
1 cup Sugar
1 1/2 tsp Baking powder
1 1/2 tsp Vanilla extract
2/3 cup Flour
3 Eggs
1/2 – 1 cup Margarine
Powdered sugar

Instructions:

  1. Preheat oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

  2. Prepare carrots: Steam or boil the carrots until tender. Once done, drain them well and transfer them to a large mixing bowl.

  3. Mix with sugar and flavorings: While the carrots are still warm, add the sugar, baking powder, and vanilla extract to the mixing bowl.

  4. Blend until smooth: Use a mixer to beat the mixture until smooth, ensuring the sugar and flavorings are well incorporated.

  5. Incorporate flour and eggs: Gradually add the flour to the mixture, stirring well after each addition. Then, add the beaten eggs and mix thoroughly until smooth.

  6. Add margarine: Incorporate the margarine into the mixture and beat until well combined. Adjust the amount of margarine based on your preference, between 1/2 to 1 cup.

  7. Transfer to baking dish: Lightly grease a 2-quart baking dish and pour the carrot mixture into it, ensuring it’s evenly spread.

  8. Bake: Place the baking dish in the preheated oven and bake at 350 degrees Fahrenheit (175 degrees Celsius) for approximately 1 hour. The top should turn light golden brown when done.

  9. Serve: Once baked, remove the carrot souffle from the oven and let it cool for a few minutes. Sprinkle powdered sugar lightly over the top before serving for an extra touch of sweetness.

This Piccadilly’s Sweet Carrot Souffle is a delightful dish that perfectly balances sweetness with the natural flavors of carrots. Whether enjoyed as a side dish or a standalone treat, it’s sure to impress your guests and leave them craving more!
