Prepare carrots: Steam or boil the carrots until tender. Once done, drain them well and transfer them to a large mixing bowl.
-
Mix with sugar and flavorings: While the carrots are still warm, add the sugar, baking powder, and vanilla extract to the mixing bowl.
-
Blend until smooth: Use a mixer to beat the mixture until smooth, ensuring the sugar and flavorings are well incorporated.
-
Incorporate flour and eggs: Gradually add the flour to the mixture, stirring well after each addition. Then, add the beaten eggs and mix thoroughly until smooth.
-
Add margarine: Incorporate the margarine into the mixture and beat until well combined. Adjust the amount of margarine based on your preference, between 1/2 to 1 cup.
-
Transfer to baking dish: Lightly grease a 2-quart baking dish and pour the carrot mixture into it, ensuring it’s evenly spread.
-
Bake: Place the baking dish in the preheated oven and bake at 350 degrees Fahrenheit (175 degrees Celsius) for approximately 1 hour. The top should turn light golden brown when done.
-
Serve: Once baked, remove the carrot souffle from the oven and let it cool for a few minutes. Sprinkle powdered sugar lightly over the top before serving for an extra touch of sweetness.
