Ingredients
- 1/4 cup vegetable oil
- 1 onion, chopped
- 1 bunch fresh coriander (cilantro), stalks chopped, leaves separated
- 1 green chili (adjust according to heat preference)
- 1 medium cauliflower, cut into florets
- 3 potatoes, peeled and diced
- 2 tomatoes, diced
- 1-inch piece fresh ginger, grated
- 2 cloves garlic, minced
- 1 tsp cumin seeds
- 2 tsp turmeric powder
- 1 tsp salt (or to taste)
- 2 tsp garam masala
- Water, as needed
Instructions

Heat vegetable oil in a large saucepan over medium heat.

Add chopped onion and cumin seeds. Sauté until onions are golden and translucent.

Stir in chopped coriander stalks, green chili, turmeric powder, and salt. Cook for another minute.

Add diced tomatoes, grated ginger, and minced garlic. Mix well and cook for 2-3 minutes until tomatoes soften.

Add diced potatoes and cauliflower florets to the saucepan. Stir to coat them in the curry mixture. If the mixture seems dry, add a few tablespoons of water to prevent sticking.

Cover the saucepan and simmer for about 20 minutes, or until the potatoes and cauliflower are tender. Stir occasionally to ensure even cooking.

Once the vegetables are cooked through, add garam masala and mix gently.

Sprinkle chopped coriander leaves (cilantro) over the curry for garnish.

Remove from heat and let it sit covered for a few minutes to allow the flavors to meld.
