Instructions:

  1. Prepare Chicken Filling:

    • In a large pot, combine chicken broth, chicken breast halves, and saffron thread.
    • Bring to a boil, then reduce heat, cover, and simmer for about 30 minutes until the chicken is cooked through.
    • Transfer the cooked chicken to a large bowl and allow it to cool briefly, reserving the broth.
    • Remove the skin and bones from the chicken, then cut it into 3/4-inch cubes and place them in a 15 x 10 x 2-inch (4 quart) glass baking dish.
  2. Prepare Vegetable Mixture:

    • Bring the reserved broth to a boil.
    • Add carrots and celery, and cook for 5 minutes.
    • Using a slotted spoon, transfer the cooked carrots and celery to the dish with the chicken.
    • Add green onions, peas, smoked ham, onion, and parsley to the chicken mixture.
  3. Prepare Sauce:

    • De-fat the broth and add enough additional broth to make 6 1/2 cups; set aside.
    • In a large saucepan, melt unsalted butter over medium heat.
    • Add all-purpose flour and whisk to combine, letting it cook for 2-3 minutes.
    • Gradually whisk in the reserved broth and bring to a boil.
    • Boil until thick and smooth, whisking constantly for about 8 minutes.
    • Season with salt and ground pepper, then add the sauce to the chicken mixture. (This step can be done a day ahead; cover and chill, then bring to room temperature before continuing.)
  4. Prepare Topping:

    • Position the rack in the center of the oven and preheat to 400ยฐF (200ยฐC).
    • In a large bowl, whisk together milk, egg, and melted butter until well blended.
    • Add the remaining ingredients (yellow cornmeal, sharp cheddar cheese, baking powder, salt, and ground pepper) to the milk mixture and stir until combined.
  5. Assemble and Bake:

    • Drop the prepared batter by tablespoonfuls over the chicken filling in the baking dish.
    • Bake the cobbler in the preheated oven for about 35 minutes, or until the topping is firm and golden brown.
  6. Serve and Enjoy!
