  • 2 chicken thighs

  • 1 egg
  • 1 teaspoon stock powder

Instructions:

Step Description
1 Place chicken thighs in a small pan, add water, and sliced onion. Cover and simmer until the chicken is cooked, approximately 20 minutes.
2 Reserve 3 cups of the strained chicken stock.
3 Remove meat from the bones, discard the skin, and chop the meat into small pieces.
4 In a large pot, combine the corn, reserved chicken stock, chicken meat, stock powder, shallots, soy sauce, and grated gingerroot.
5 Bring the mixture to a boil, stirring constantly, then reduce the heat and let it simmer for 3 minutes.
6 Remove the pot from the heat and slowly whisk in the lightly beaten egg, stirring continuously until well incorporated.
