  • 1 tablespoon mustard seeds
  • 1 teaspoon anise seed

  • 1 teaspoon garam masala powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon turmeric powder
  • 1/4 cup coconut oil

Instructions:

1 To prepare the batter, start by soaking the dals, broken rice, and basmati rice overnight in plenty of water.
2 After soaking, drain the water and grind the mixture to a slightly grainy consistency using a food processor.
3 Add the remaining ingredients for the batter and pour in enough water. Whisk thoroughly until you achieve a thick and fluffy mixture.
4 Set the batter aside for 8 hours to ferment, allowing the flavors to develop.
5 For the chicken filling, heat mustard oil in a pan until it reaches the smoking point. Reduce the heat and add ginger-garlic paste, sautéing for about a minute.
6 Add mustard seeds, aniseed, and asafoetida to the pan, and sauté until fragrant.
7 Now, add the diced chicken along with the remaining spices. Cook until the chicken is tender and fully cooked.
8 To prepare the dosas, heat coconut oil on a tawa or flat griddle. Pour one ladle of batter onto the tawa, spreading it out to form a thin dosa.
9 Fry the dosa until the base turns golden brown and crisp.
10 Spoon a generous amount of the chicken filling onto the center of the dosa.
11 Carefully fold the dosa over the filling and serve immediately while hot.
12 Repeat the process with the remaining batter and chicken filling until all dosas are prepared.
