Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter
  • 1/4 cup margarine
  • 1/2 cup sugar
  • 1 1/2 tablespoons cornstarch
  • 1/4 cup sugar
  • 1/8 teaspoon salt
  • 1 3/4 cups water
  • 4 tablespoons lemon juice
  • 1/2 cup butter
  • 2 tablespoons margarine
  • 4 egg yolks
  • 1/4 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 4 egg whites

Instructions:

  1. Preheat oven to 350Β°F (175Β°C).

  2. Prepare the crust: In a bowl, blend graham cracker crumbs, 1/2 cup butter, and 1/4 cup sugar. Spoon the mixture into a 9-inch pie pan and press firmly against the bottom and sides (but not over the rim). Bake for 8-10 minutes. Allow to cool before filling.

  3. Prepare the filling: In a heavy saucepan, mix cornstarch, 1/4 cup sugar, and 1/8 teaspoon salt. Slowly blend in water and heat, stirring constantly, until thickened and smooth. Blend a little of the hot mixture into the egg yolks, then return to the pan and cook and stir over the lowest heat for 2-3 minutes (do not boil). Off heat, stir in 1/2 cup lemon juice, 2 tablespoons butter, and 2 tablespoons margarine. Spoon the filling into the prepared pie shell.

  4. Make the meringue: Use a glass mixing bowl for best results (metal works fine too, but DO NOT use plastic). Beat egg whites until frothy using an electric hand mixer. Add cream of tartar and salt, continue beating, adding sugar 1 tablespoon at a time. Once all sugar is incorporated, add vanilla and beat on the highest mixer speed until glossy and peaks stand straight up when beaters are withdrawn.

  5. Assemble the pie: Spoon about half of the meringue around the edge of the warm filling, then pile the remainder in the middle, twirling the spoon around to create peaks.

  6. Bake the pie: Bake the assembled pie for 12-15 minutes, until the meringue is touched with brown.

  7. Cool and serve: Allow the pie to cool for at least two hours before serving to allow the filling to set properly.
