Ingredients:

  • 1 Hubbard squash (approximately 2 pounds)
  • 1/4 cup water
  • Zest of 2 oranges
  • Juice of 2 oranges
  • 2 tablespoons unsalted butter
  • Salt and pepper, to taste

Instructions:

Step Instruction
1 Preheat your oven to 400°F (200°C).
2 Place the unpeeled Hubbard squash, flesh side down, in a baking pan.
3 Pour 1/4 cup of water over the squash in the baking pan.
4 Bake the squash for 30 minutes, then turn it over and bake for another 30 minutes or until the squash is tender and lightly caramelized.
5 Once the squash is cooked, remove it from the oven and allow it to cool slightly.
6 Scrape the flesh off the skin of the squash and transfer it to a food processor.
7 Add the orange zest, orange juice, unsalted butter, salt, and pepper to the food processor.
8 Process the mixture until smooth and well combined.
9 Serve the Hubbard squash and orange puree warm as a delicious side dish or accompaniment to your favorite meals.

Notes:

  • This puree can be made ahead of time and reheated gently on the stove or in the microwave before serving.
  • Feel free to adjust the seasoning according to your taste preferences, adding more salt and pepper if desired.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Simply reheat before serving.
