Instructions

  1. Prepare the Ingredients:

    • Start by boiling the eggs in a pot of water until hard-boiled, which typically takes about 10-12 minutes. Once done, remove them from the water, cool, peel, and set aside.
    • While the eggs are boiling, heat oil in a frying pan and fry the tofu until golden brown on all sides. Remove from the heat and drain on paper towels.
  2. Blend the Spices:

    • In a blender or mortar and pestle, combine the red shallots, garlic, coriander seeds, candlenuts, brown sugar, turmeric, and galangal. Blend until smooth to create a fragrant spice paste.
  3. Cooking the Dish:

    • In a large saucepan, pour in the coconut milk and bring it to a gentle simmer. Add the blended spice paste to the coconut milk and stir well to combine.
    • Add the boiled eggs and fried tofu to the saucepan. If you enjoy a bit of heat, you can also add some sliced raw chili at this stage.
    • Incorporate the lemongrass and bay leaves into the mixture. Stir everything together gently and allow it to cook on low heat for about 10-15 minutes, or until the flavors meld and the dish is heated through.
  4. Taste and Adjust:

    • Season the dish with salt or your preferred seasoning to taste. Stir once more and let it simmer for a few additional minutes.
  5. Serve:

    • Once cooked, remove from heat and serve warm. This dish pairs beautifully with steamed rice or can be enjoyed on its own.

Enjoy your homemade Sayur Tahu Bumbu Kuning, a comforting dish that highlights the rich flavors of Indonesian cuisine. Perfect for a weeknight dinner or special occasions, it’s a delightful way to explore new culinary horizons!
