Ingredients:

  • 2 cups masa harina
  • 1 1/4 – 1 1/3 cups water

Instructions:

  1. Please note: the difference between ΒΌ cup and 1/3 cup, while only 4 teaspoons, can be critical.

  2. In a mixing bowl, combine the masa harina with 1-ΒΌ cups of water. Mix well until it forms a smooth masa (dough). Adjust the consistency by adding more water if needed, a teaspoon at a time, until the dough holds together without being too dry or too wet.

  3. Pinch off golf ball-sized portions of the masa dough and roll them into balls.

  4. Place a ball of masa dough between two sheets of plastic wrap inside a tortilla press.

  5. Press the masa dough firmly to flatten it into a thin tortilla.

  6. Carefully peel off the top layer of plastic wrap, then flip the tortilla onto your hand, removing the remaining plastic wrap.

  7. Heat a dry cast iron skillet over medium-high heat until hot.

  8. Place the tortilla onto the hot skillet and cook for about 30 seconds on one side, then gently flip it over and cook for another 60 seconds, or until it puffs slightly and develops brown spots.

  9. Flip the tortilla back to the first side and cook for an additional 30 seconds.

  10. Remove the cooked tortilla from the skillet and keep it warm by placing it in an aluminum foil pouch wrapped in a kitchen towel or napkin.

  11. Repeat the process with the remaining masa dough, adjusting the heat as needed to prevent burning.

  12. Serve the warm tortillas as desired, whether as a base for tacos, enchiladas, or simply enjoy them on their own.

Notes and Tips:

  • If your tortillas aren’t perfect circles, don’t fret; their irregular shape adds character and won’t affect the taste.
  • Ensure your skillet or griddle is adequately heated before cooking to achieve the desired texture and browning.
  • Store any leftover tortillas in an airtight container or freezer bag for up to 2 days, or freeze them for longer shelf life.
  • To reheat, wrap the tortillas in damp paper towels and microwave for 30 seconds or warm them in a preheated oven at 350Β°F for about 12 minutes.
