Classic Cornbread Muffins Recipe 🌽🧁

Description: Fast, easy, and tasty — perfect with a stew or chili. These classic cornbread muffins also freeze well. Originally discovered in an older Bonnie Stern cookbook, this recipe has stood the test of time.

Ingredients:

3/4 cup Cornmeal
1 cup All-purpose flour
1/4 cup White sugar
1 tsp Baking powder
1/4 tsp Salt
1 Egg
1 cup 1% low-fat milk
1/4 cup Unsalted butter
Optional toppings: Chopped jalapenos, red pepper, tinned corn kernels, cheddar cheese

Instructions:

  1. Preheat Oven: Preheat your oven to 425°F (220°C).

  2. Prepare Muffin Tin: Spray muffin tin with nonstick spray or line with paper muffin cups.

  3. Mix Dry Ingredients: In a mixing bowl, combine the cornmeal, all-purpose flour, white sugar, baking powder, and salt. Stir well to ensure even distribution.

  4. Prepare Wet Ingredients: In another bowl, beat the egg. Then, add the milk and melted butter. (Note: If using normal butter, adjust the amount of salt accordingly.)

  5. Combine Wet and Dry Ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just blended. Avoid overmixing to keep the muffins tender.

  6. Add Optional Ingredients: For added flavor and texture, you can mix in chopped jalapenos, red pepper, and/or tinned corn kernels to the batter at this stage.

  7. Fill Muffin Pans: Scoop the batter into the prepared muffin pans, filling each cup about two-thirds full.

  8. Add Toppings: If desired, sprinkle cheddar cheese on top of the muffins before baking for an extra savory touch.

  9. Bake: Place the muffin pans in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

  10. Serve: Once baked, remove the muffins from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Enjoy these classic cornbread muffins warm or at room temperature.
