Ingredients:

4 – 5 cups All-purpose flour
2 tsp Salt
2 packages Active dry yeast
1 cup Water
1/2 cup Honey
1/4 cup Margarine
1 cup Butter
2 cups Cream-style cottage cheese
1 Egg
1/2 cup Whole wheat flour
1/2 cup Rolled oats

Instructions:

  1. In a large bowl, combine 2 cups of all-purpose flour, salt, and yeast; blend well.

  2. In a medium saucepan, heat water, honey, margarine, and cottage cheese until very warm (120 to 130°F). The margarine does not need to melt completely.

  3. Add the warm liquid and eggs to the flour mixture. Blend at low speed until moistened; beat for 3 minutes at medium speed.

  4. By hand, stir in whole wheat flour, oats, nuts, and enough all-purpose flour to form a soft dough.

  5. On a floured surface, knead the dough until smooth and elastic, about 10 minutes.

  6. Place the dough in a greased bowl; cover loosely with plastic wrap and a cloth towel.

  7. Let the dough rise in a warm place (80 to 85°F) until light and doubled in size, about 1 hour.

  8. Generously grease two 8×4 or 9×5-inch loaf pans.

  9. Punch down the dough. Divide it into 2 parts and shape them into loaves. Place them in the greased pans.

  10. Cover the pans and let the dough rise in a warm place until light and doubled in size, about 1 hour.

  11. Preheat the oven to 375°F.

  12. Uncover the dough and bake for 35 to 40 minutes or until the loaves sound hollow when lightly tapped.

  13. Immediately remove the loaves from the pans and cool them on wire racks.

  14. For softer crusts, brush the tops of the loaves with melted margarine, if desired.
