Ingredients:
Quantity | Ingredient |
---|---|
4 – 5 cups | All-purpose flour |
2 tsp | Salt |
2 packages | Active dry yeast |
1 cup | Water |
1/2 cup | Honey |
1/4 cup | Margarine |
1 cup | Butter |
2 cups | Cream-style cottage cheese |
1 | Egg |
1/2 cup | Whole wheat flour |
1/2 cup | Rolled oats |
Instructions:
-
In a large bowl, combine 2 cups of all-purpose flour, salt, and yeast; blend well.
-
In a medium saucepan, heat water, honey, margarine, and cottage cheese until very warm (120 to 130°F). The margarine does not need to melt completely.
-
Add the warm liquid and eggs to the flour mixture. Blend at low speed until moistened; beat for 3 minutes at medium speed.
-
By hand, stir in whole wheat flour, oats, nuts, and enough all-purpose flour to form a soft dough.
-
On a floured surface, knead the dough until smooth and elastic, about 10 minutes.
-
Place the dough in a greased bowl; cover loosely with plastic wrap and a cloth towel.
-
Let the dough rise in a warm place (80 to 85°F) until light and doubled in size, about 1 hour.
-
Generously grease two 8×4 or 9×5-inch loaf pans.
-
Punch down the dough. Divide it into 2 parts and shape them into loaves. Place them in the greased pans.
-
Cover the pans and let the dough rise in a warm place until light and doubled in size, about 1 hour.
-
Preheat the oven to 375°F.
-
Uncover the dough and bake for 35 to 40 minutes or until the loaves sound hollow when lightly tapped.
-
Immediately remove the loaves from the pans and cool them on wire racks.
-
For softer crusts, brush the tops of the loaves with melted margarine, if desired.
