Ingredients:

Quantity Ingredient
3 slices Bacon
1 cup Fresh mushrooms
1/4 cup Onion
1 cup Lump crabmeat
1 cup Swiss cheese
1/2 cup Mayonnaise
1/3 cup Parmesan cheese
2 tbsp Butter
6 English muffins
Cayenne pepper
Paprika

Instructions:

  1. Cook Bacon:

    • In a large skillet, cook bacon until crisp. Transfer to a paper-towel lined plate to drain. Once cooled, crumble the bacon and set it aside for later use.
  2. Prepare Mushroom Mixture:

    • Remove all but 2 tablespoons of bacon drippings from the skillet.
    • Saute mushrooms and onions in the remaining bacon drippings until tender and fragrant. Set aside to cool slightly.
  3. Mix Crab Filling:

    • In a mixing bowl, combine lump crabmeat, Swiss cheese, mayonnaise, the sauteed mushroom and onion mixture, crumbled bacon, and Parmesan cheese. Stir until well combined.
  4. Assemble Melts:

    • Preheat your oven to 400°F (200°C).
    • Spread butter evenly over the halved English muffins.
    • Top each muffin half with a generous portion of the crab mixture, spreading it out evenly.
    • Sprinkle a pinch of cayenne pepper and paprika over the crab mixture for an added kick of flavor.
  5. Bake:

    • Place the prepared muffins on a baking sheet lined with parchment paper or aluminum foil.
    • Bake in the preheated oven for 10-15 minutes, or until the tops are lightly browned and the cheese is melted and bubbly.
  6. Serve and Enjoy:

    • Once baked, remove the Mushroom Crab Melts from the oven and allow them to cool slightly before serving.
    • Serve warm as a delicious lunch or snack option, perfect for sharing with friends and family!

  • For added flavor, you can customize these melts by incorporating your favorite herbs or spices into the crab mixture.
  • Serve these Mushroom Crab Melts alongside a fresh salad or soup for a complete and satisfying meal.
