Description

At a previous job, whenever the party sign-up list got to me, I was already filled in to bring this every time! This artichoke dip recipe can be easily halved, but I recommend using only full-fat ingredients; it does NOT turn out well with light or nonfat products. It’s creamy, cheesy, and packed with flavor, making it a hit at any gathering or potluck.

Ingredients

  • 2 cans artichoke hearts
  • 2 packages cream cheese
  • 1 cup mayonnaise
  • 1 cup Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon parsley flakes
  • A pinch of cayenne pepper
  • 1 baguette or crackers, for serving

Instructions

  1. Preheat oven: Preheat your oven to 350 degrees Fahrenheit.

  2. Prepare artichokes: Coarsely chop the artichoke hearts and set them aside.

  3. Mix cream cheese, mayonnaise, and Parmesan: In a mixing bowl, combine the cream cheese, mayonnaise, and Parmesan cheese. Beat until fluffy and well combined.

  4. Add seasonings and artichokes: Once the cream cheese mixture is fluffy, add in the garlic powder, parsley flakes, and cayenne pepper. Then, gently fold in the chopped artichoke hearts until evenly distributed.

  5. Transfer to baking dish: Transfer the dip mixture into a casserole dish or a fluted quiche dish, spreading it out evenly.

  6. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the dip is bubbly and lightly golden brown on top.

  7. Serve: While the dip is baking, slice the baguette and arrange crackers on a serving platter. Once the dip is ready, remove it from the oven and place it on the table alongside the sliced baguette and crackers. Watch as your guests eagerly dig in and enjoy!

Tips

  • For added flavor, you can sprinkle some extra Parmesan cheese on top of the dip before baking.
  • If you prefer a bit of heat, you can adjust the amount of cayenne pepper to suit your taste.
  • This dip can be made ahead of time and stored in the refrigerator until ready to bake. Simply cover the dish with plastic wrap or aluminum foil and refrigerate until needed. Allow the dip to come to room temperature before baking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through before serving.
