Crispy Fried Catfish (Lele Goreng)
Ingredients:
- 4 whole catfish (cleaned)
- 1/2 teaspoon cooking vinegar
- All-purpose seasoning flour (enough to coat)
- A little water
- Spice Paste:
- 3 cloves garlic
- 3 pieces turmeric root
- 2 roasted candlenuts
- 1 tablespoon roasted coriander powder
- Salt, to taste

Prepare the Marinade:
In a bowl, combine the garlic, turmeric root, roasted candlenuts, roasted coriander powder, and salt. Blend these ingredients into a smooth paste. Add a splash of water and the cooking vinegar to the paste to achieve a marinade consistency. -
Marinate the Catfish:
Place the cleaned catfish in the bowl with the prepared spice paste. Ensure the fish is well-coated. Allow it to marinate for about 15 to 30 minutes to absorb the flavors. -
Coat the Fish:
Just before frying, lightly sprinkle the all-purpose seasoning flour over the marinated catfish. Gently pat the flour onto the fish to ensure an even coating. -
Fry the Catfish:
Heat a generous amount of oil in a pan over medium heat. Once the oil is hot, carefully add the coated catfish. Fry until golden brown and crispy, turning occasionally to ensure even cooking. -
