  • 6 tbsp cornstarch
  • 1 onion
  • 1 cup steamed rice

  • 1/4 tsp black pepper
  • 1 tsp white pepper
  • 1 tbsp rice wine
  • 1 tbsp sake

Instructions:

Step Description
1 Note: This recipe calls for boneless thigh meat, which is preferred, but I tried using breast meat and the result was fine also.
2 In a small bowl, mix together oyster sauce, dark soy sauce, black pepper, white pepper, rice wine, and sake to create the flavorful sauce. Set aside for later use.
3 Begin by cutting the boneless chicken thighs into small dice, approximately 1/4-inch in size.
4 Heat 1-2 cups of peanut or any other cooking oil of your choice in a wok over medium-high heat.
5 Place cornstarch in a small bowl and lightly dust the chicken pieces, ensuring to shake off any excess cornstarch.
6 Carefully fry the chicken pieces in the hot oil in small batches until they turn crispy and golden brown, which usually takes about 2-3 minutes. Once fried, drain the excess oil and set aside.
7 Remove the oil from the wok and discard any remaining residue. Heat 1 tablespoon of oil in the wok over medium heat.
8 Stir-fry the onion in the wok for about 1 minute until it becomes translucent and fragrant. Add peas and carrots to the wok and continue to cook for an additional 30 seconds.
9 Now, add the previously prepared sauce mixture to the wok, along with the fried chicken pieces, ensuring that everything is evenly coated with the flavorsome sauce.
10 Once the chicken and vegetables are thoroughly coated and heated through, serve the dish immediately with hot steamed rice. Enjoy the delightful combination of flavors and textures!
