Crab Cakes Recipe 🦀

Preparation Time: 30 minutes
Cooking Time: 30 minutes
Total Time: 1 hour
Servings: 14-24 large-small crab cakes

Description:

This recipe, adapted from Epicureous.com, presents a unique twist on the classic crab cake. Instead of overpowering flavors like Old Bay or excessive breading, these cakes allow the delicate flavor of crab to shine. They’re perfect for any occasion, whether as an elegant appetizer or a satisfying main dish. With a crispy exterior and a tender, flavorful interior, these crab cakes are sure to impress your guests.

Ingredients:

  • 2 eggs
  • 2 tablespoons heavy cream
  • 4 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon dried tarragon
  • 4 tablespoons finely chopped onions
  • 4 cups panko breadcrumbs
  • 4 tablespoons unsalted butter
  • Salt and pepper, to taste
  • 1 pound fresh crab meat, picked over for shells

Instructions:

  1. Prepare Crab Mixture:

    • In a large mixing bowl, combine the fresh crab meat with 1 cup of panko breadcrumbs. Ensure the mixture is evenly distributed.
  2. Prepare Cream Mixture:

    • In a separate small bowl, whisk the eggs thoroughly. Add the heavy cream to the whisked eggs and continue to whisk until well combined.
  3. Combine Ingredients:

    • Pour the cream mixture into the bowl of crab meat and breadcrumbs. Add the Dijon mustard, lemon juice, dried tarragon, chopped onions, salt, and pepper to the bowl. Mix all the ingredients together until fully incorporated.
  4. Form Crab Cakes:

    • Heat 1 tablespoon of unsalted butter in a large skillet over moderate heat until the foam subsides.
    • Take a mounded tablespoonful of the crab mixture in your hand and gently pat additional panko breadcrumbs onto the outside of the crab cake. Be careful not to dip it directly into the breadcrumbs, as the cake may fall apart.
  5. Cook Crab Cakes:

    • Place the formed crab cakes into the preheated skillet and sauté for 2 to 3 minutes on each side, or until they turn a deep golden brown. Carefully flip the cakes over and cook for an additional 2 to 3 minutes.
  6. Keep Warm:

    • If preparing the crab cakes ahead of time, they can be cooked a few hours in advance. Simply place them on a baking sheet and cover until ready to serve.
  7. Reheat (if necessary):

    • To reheat the crab cakes before serving, preheat the oven to 350°F (175°C). Place the crab cakes on a baking sheet and heat in the oven for 10 to 15 minutes, or until warmed through.
