Ingredients:

  • 1 cup chickpeas, soaked overnight
  • 4-6 garlic cloves
  • 1 onion
  • 1/2 cup parsley
  • 1/2 teaspoon salt
  • Freshly ground pepper, to taste
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 2 eggs
  • 1/2 teaspoon baking powder

Instructions:

Step Description
1 Soak chickpeas overnight in cold water until soft.
2 Drop garlic cloves through the feed tube of a food processor while it is running. Process until minced. Discard the peel.
3 Add onion and parsley to the food processor. Process until minced.
4 Add remaining ingredients to the food processor and process until finely ground and smooth, about 20 to 30 seconds, scraping down the bowl as necessary. You might have to do this in two loads depending on the size of your food processor.
5 Form the mixture into 1-inch balls.
6 Heat oil in a deep fryer or large skillet over medium-high heat.
7 Deep fry the falafel balls in hot oil until golden brown, about 3-4 minutes per side.
8 Remove falafels from oil and drain on paper towels.
9 Serve hot with your favorite dipping sauce or in warm pita bread. Enjoy!
10 Falafels can also be frozen for later use.
