Instructions:

  1. Prepare Potato Balls:

    • Begin by boiling the potatoes until they are tender.
    • Once boiled, mash the potatoes in a large bowl.
    • Add finely chopped ginger, garlic, green chili, coriander leaves, and salt to the mashed potatoes.
    • Mix the ingredients thoroughly using your hands.
    • Shape the mixture into small balls, making around 20-22 balls.
    • Set the potato balls aside for later use.
  2. Fry Potato Balls:

    • Heat oil in a wok or deep frying pan over medium heat.
    • While the oil is heating, spread cornflour on a plate.
    • Roll each potato ball in the cornflour until evenly coated.
    • Carefully place the coated potato balls into the hot oil.
    • Fry the balls until they turn golden brown, ensuring they cook evenly on all sides.
    • Once fried, remove the potato balls from the oil and set them aside on a paper towel to drain excess oil.
  3. Prepare Manchurian Gravy:

    • Heat a separate pan over medium heat.
    • Add soya sauce, minced ginger, minced garlic, hot chili sauce, tomato ketchup, chopped spring onions, and chili and garlic sauce to the pan.
    • Stir the mixture continuously for about 2 minutes, allowing the flavors to blend.
    • In a bowl, combine half a cup of cold water with cornflour, stirring until smooth.
    • Pour the cornflour mixture into the pan, stirring continuously to prevent lumps from forming.
    • Gradually add a cup of water to the pan, adjusting the consistency of the gravy as desired. Add more water if the gravy is too thick.
    • Once the gravy reaches your desired consistency, remove it from heat.
  4. Combine Potato Balls and Gravy:

    • Carefully place the fried potato balls into the prepared Manchurian gravy, ensuring they are fully coated.
