  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of black pepper
  • Pinch of salt
  • 1 beaten egg

For the Vegetable Stir-fry:

  • 1/2 cup celery, thinly sliced

  • 1/2 cup green pepper, thinly sliced
  • 2 tablespoons olive oil
  • Salt to taste

For the Sauce:

  • 1 cup water
  • 2 tablespoons white vinegar
  • 3/4 cup granulated sugar
  • 1 tablespoon ketchup
  • 1 tablespoon dark soy sauce
  • 1 tablespoon tapioca starch
  • 2 tablespoons water (for mixing tapioca starch)

Instructions:

  1. Prepare the Shrimp:

    • Rinse the shrimp in cold water and drain.
    • In a bowl, sprinkle the shrimp with black pepper and salt, then let them dry while preparing other ingredients.
  2. Make the Batter:

    • In a mixing bowl, combine flour, baking powder, baking soda, a pinch of black pepper, a pinch of salt, beaten egg, and water. Mix well until a smooth batter forms.
  3. Heat the Oil:

    • Heat olive oil in a deep medium-sized saucepan or frying pan over medium-high heat.
  4. Coat and Fry the Shrimp:

    • Dip each shrimp into the batter, ensuring they are well coated.
    • Using tongs, hold each shrimp by the tail and dip it into the hot oil for a couple of seconds to prevent curling, then drop it gently into the oil.
    • Deep fry several shrimp at a time for about 2 minutes, then turn them over and cook for an additional 1 1/2 to 2 minutes, or until they turn golden brown.
    • Remove the fried shrimp onto paper towels to drain excess oil, and set them aside.
  5. Prepare the Vegetable Stir-fry:

    • Heat a wok over high heat and add 2 tablespoons of olive oil.
    • Add the prepared celery, cucumber, carrot, and green pepper to the wok, stirring well.
    • Sauté the vegetables for about 2 minutes, or until they are just partially cooked.
  6. Make the Sauce:

    • In a small mixing bowl, combine water, white vinegar, sugar, ketchup, dark soy sauce, and tapioca starch mixed with 2 tablespoons of water until smooth.
  7. Combine Everything:

    • Add the sauce mixture to the wok, stirring constantly to coat the vegetables.
    • Cook until the sauce thickens slightly, approximately 1 minute.
  8. Serve:

    • Divide the fried shrimp equally among individual serving plates.
    • Spoon the vegetable mixture over the shrimp.
    • Serve immediately and enjoy the delightful flavors of this Deep Fried Shrimp with Vegetables dish!
