- 2 tbsp cornstarch
- 5 small packets shrimp paste (terasi), toasted and ground
- 1/2 tsp mushroom bouillon
- Coating Mixture:
- 4 tbsp cornstarch
- 2 tbsp tapioca flour
- 1 tbsp all-purpose flour
- 1 tbsp rice flour
- 1/2 tsp baking powder

In a bowl, combine garlic, ginger, sesame oil, oyster sauce, soy sauce, ground pepper, cornstarch, shrimp paste, and mushroom bouillon. Mix well.

Add the chicken pieces to the marinade, ensuring they are evenly coated. Refrigerate for at least 1 hour, or preferably overnight for maximum flavor absorption.
